Butter and brown sugar make these cookies chewy and moist. Hermit cookies are so named because they can be stored for long periods due to their moisture level. They are packed with raisins, dates, and nuts, which adds to their chewiness and texture. Can you imagine what they’d taste like? Get ready, start baking gluten free hermit cookies! Gluten Free Chocolate Biscotti
I love these gluten free biscotti because they are moist. You can also make them dryer, if that is what you prefer. I’ve including baking instructions for both. However, they are not so dry that you have to have something to drink nearby. I like my biscotti closer to shortbread cookies, with just a little less butter. I think you’ll fall in love with these biscotti. Please leave me feedback once you’ve made them in a below comment. Enjoy! Continue reading “Gluten Free Chocolate Biscotti”

How to Make Mayonnaise in 5 Minutes?
I discovered how to make mayonnaise much faster than traditional methods. I’ve tried using a high-powered mixer and food processor in the past, but they are extremely slow compared to this method. Using an immersion blender is the key! There are infinite variation possibilities. See the “Tips” section for suggestions.

Gluten Free Lasagna Soup
Fall is my favorite time of year. It follows high temperatures, often over 100 degrees Fahrenheit. That’s Central California living. We live about 25 miles south of the south entrance of Yosemite. Today was in the low 90s, but the overcast, gray skies inspired this gluten free lasagna soup. It is a perfect way to use up broken pieces of uncooked lasagna noodles. It is also a wonderful way to use leftover ricotta cheese. I had an entire tub that was about to go bad. Continue reading “Gluten Free Lasagna Soup”

Gluten Free Lady Fingers Recipe
You can easily make this gluten free lady fingers recipe by using my gluten free sponge cake recipe. (I have two recipes on this site for sponge cake, but I used the one calling for superfine rice flour.) The amount you make will vary, depending upon which pan you use. There are lady finger pans available, but you can get away with using a Hostess Twinkies Pan. You can also use a jelly roll pan and cut up individual pieces of cake. However, that method doesn’t look as nice and you are taking the chance of the cake crumbling. If you do try this method, prior to slicing, refrigerate the cake at least 4 hours, preferably overnight. Meanwhile, now you can make traditional tiramisu and more!
