I usually make this gluten free zucchini casserole without any seasoning, as zucchini is flavorful enough on its own, but adding a bit of smoked paprika made it very tasty! Ensure the smoke paprika you use is gluten-free, as some items that contain smoke flavor are made by using gluten to carry the smoke. You could really get a wonderful flavor by adding cooked bacon. Oh yum! I would use this when I had guests, but not as an everyday vegetable, as cannot afford the calories! – but oh, how I wish I could!  That just sounds so yummy! Gluten-Free Basil Grilled Cheese Sandwich

Gluten-free Grilled Basil Cheese Sandwich

Mid business taxes, and in a rush for a quick lunch I popped my head in the frig for a quick gluten-free sandwich and saw some cheddar cheese. I haven’t had a grilled cheese sandwich in a couple of years, but just didn’t want a plain one, but one more on the style of California cuisine. I pictured sautéed onion and roasted peppers, but no time for that! I decided to spread my bread with some basil paste and layer each slice with cheddar cheese and plop it in the frying pan. Great and fast! I loved it, but did miss the sautéed veggies! Just remember, a gluten-free grilled cheese sandwich doesn’t have to be plain. Add any of your faves, including meat, such as chicken, bacon, etc. If you’re in a rush, this one is sure to please!

Wanting to experiment with new gluten-free flours and grains, I picked up some of Bob’s Red Mill organic amaranth flour and amaranth grains to create a new gluten free cookie recipe. I have been wanting to find a healthy snack besides premade protein bars, and amaranth (a seed) is rich in protein (15-17% by weight). Compared to other grains, it is the richest in lysine and the highest in fiber (3 times wheat). It is also loaded with vitamins and minerals. Gluten Free Cinnamon Rolls

Gluten-free Cinnamon Roll

I had a request to create a recipe for gluten free cinnamon rolls ages ago and just now got around to creating it. I really wanted to skip this one, as I still haven’t started my new diet, but how could I resist, right?  Not a sweet thing in the house, so I had to make something! I made them small, basically a half batch of what I would have wanted to make, but I have to do this to test a new recipe out sometimes. The next batch I make will be double and I will try allowing the rolls to rise for about 30 minutes prior to baking. I’ll let you know how this works out by updating this post. They are a little darker in color, as I used homemade pecan milk, but you can use any milk you wish. They are sweet enough not to need a sugary topping, too! These gluten free cinnamon rolls were delicious, but heavier than I desire. I’m working on improving it…about 5 attempts now.

Gluten Free Pesto Mashed Potatoes

A month or so ago, I went to an Italian restaurant where I was served pesto mashed potatoes and it was one of those hitting my forehead type of moments, “Why didn’t I ever think of that?” They were fantastic, but lacking in butter. Perhaps they used olive oil only. They had just a hint of garlic and basil, not overbearing as you may expect. It didn’t taste like pesto pasta, nor garlic mashed potatoes, but a unique, flavorful mashed potato. I was able to duplicate the recipe, and wanted to share it with you, though my version has more butter than theirs. Rich, decadent and creamy! This recipe is not technically gluten free pigs in a blanket, but gluten-free sausages in a blanket. It uses my gluten-free biscuit recipe. I learned while making them that the blankets need to be larger than 4″ in order to prevent from popping open, perhaps enough to overlap at least an inch. I would also suggest trying some egg wash (beaten egg) between the overlapped layers to keep them closed. You just have to make sure that the sausages are not hot while wrapping them.
