I have been making an effort to reduce the carbohydrates in my diet. I purchased a Spiral Vegetable Slicer and my first experiment was making zucchini ribbons. Using zucchini pasta instead of high carb rice or corn pasta saves a tremendous amount of carbohydrates. One medium zucchini contains only 6g carbs and 2g fiber. My favorite gluten free brown rice pasta contains 43g carbs and 2g fiber per 1/2 cup of uncooked pasta. If you enjoy zucchini, you will love this dish. For years I used to crave KFC’s coleslaw. Now that us gluten free eaters can no longer eat at KFC, I thought you would appreciate my KFC clone dressing. McCormick spices are gluten-free. Be sure to avoid using mayonnaise jars that gluten-eaters may have used if you are gluten intolerant. Double dipping knives in jars can leave cross-contamination. This is one classic Italian dish that I did not grow up with, but absolutely love. You may mistake this gluten free panzanella salad for a traditional salad, but it is heartier than that. Rather than topping each salad with a few croutons, a panzanella consists of many croutons tossed within the salad. In addition, they typically do not contain lettuce. Besides the recipe below, one of my favorite panzanella salad recipes include finely diced tomatoes, hearts of celery, diced seeded cucumber, red and yellow bell peppers, and some fresh, minced garlic and basil.
