One of my husband’s favorite thanksgiving leftover sandwiches contains cranberry sauce, but adding stuffing is an extra special treat! I enjoy leftover turkey with cranberry sauce and cream cheese. It’s to die for! I hope you get a chance to try one of these ideas. We use my Gluten Free Oat Bread recipe. You can make it in the oven or a bread machine. If you’re oat intolerant, use sorghum and additional oil.

Gluten Free Leftover Thanksgiving Sandwich
An amazing gluten free sandwich using leftover turkey! Whether you are a stuffing-lover or cream-cheese fan, there's a version right for you!
Ingredients:
- 2 slices Gluten Free Oat Bread
- 1/2 cup leftover Gluten Free Stuffing or 1 ounce gluten free cream cheese (Philiadelphia)
- 2 slices leftover turkey
- 1/4 cranberry sauce (Ocean Spray with Whole Cranberries or Homemade)
Instructions:
- Most gluten free bread needs to be microwaved a short time to soften it. My oat bread does, as well. However, you may toast it, too. Heat allows you to also spread the cream cheese easily if using.
- If using cream cheese spread that on first. Otherwise go on to next step.
- Add turkey slices.
- Add stuffing, if using.
- Top with cranberry sauce. Add second piece of bread and slice in half. Serve immediately and enjoy! To make in advanced for lunch, be sure to have a microwave nearby. (When traveling, I usually lay my sandwich out on the dashboard of my car in the sun while driving (without mayonnaise) until the bread is soft. Be careful with turkey, though.)
