Kinnikinnick asked me to review 6 of their newly repackaged gluten-free mixes. However, before I get to the review there are a couple of things you must note. Kinnikinnick is one of the largest gluten-free manufacturing facilities in the world! In addition, Kinnikinnick won the Every Day with Rachael Ray’s March 2011 gluten-free baking mix taste test in the pancake and waffle mix category! Rudi’s Bakery Facebook Recipe Contest and Daily Giveaway!

On April 18, 2011 Rudi’s Bakery launched it’s Unbelievably Good Gluten-Free Recipe Contest on Facebook.  I found out about it late evening on April 19.  I suppose after sponsoring so many contests and giveaways it was time I get in on some of the fun!  I threw something together, and I didn’t even read how the recipe would judged!  I entered my Avocado Chicken Salad recipe as a sandwich, which I often make.  My recipe was approved.  Now I need to catch up with the top recipe because I am almost 2 days behind.  I’m not too far behind, though. Hail Merry Eat Raw Gift Set

I was asked to review Hail Merry’s gluten-free, vegan, raw macaroons and granola.  VegNews Magazine awarded their products the Best New Vegan Product at the Natural Products Expo West earlier this month. Ahhh! Hail Merry’s macaroons are heavenly! I wasn’t quite sure at the time if I had an allergy to coconut or not, but wanted to sample one rather than rely on my husband’s sweet tooth. I ate 3 chocolate macaroons without stopping! They almost melt in your mouth! And they are such a healthy snack! The next day I sampled the vanilla ones, and they are also melt in your mouth good! Of course, I am a chocoholic and like the chocolate ones the best! I had to save some for the hubby and did not eat any more, but really wanted to. I had no allergic reaction at all, but did to some coconut oil the following week. I really think it depends upon how coconut is processed. Gluten-free Giveaway and Review: Tropical Traditions Virgin Coconut Oil

Tropical Traditions Virgin Gold Label Coconut Oil

In addition to my gluten sensitivity, I have had allergic reactions to many coconut products.  Therefore, I was hesitant on testing this product, but lo and behold I had no reaction at all to this product!  The probable reason?  I read that many people who have food allergies may not have an allergic reaction to a food when consuming their organic version.  Avoiding chemicals, artificial ingredients, etc. is supposed to help those with food allergies.  Tropical Traditions Gold Label Virgin Coconut Oil is not refined.  The coconut is shredded (wet milled); cold pressed using the water from the inside of the coconut to make coconut milk; allowing it to sit for about a day to allow the oil to naturally separate from the milk; and then naturally separating the oil from the milk.  Their process is highly commended and makes recipes tastes wonderful!
