Whether you are making my Traditional Gluten Free Truffle Recipe or the Sugar-Free Mashed Potato Truffle Recipe, this spicy seasoning is the perfect addition in which to roll them. My favorite gluten free chocolate is Dagoba’s Xocolatl. It contains chili powder. The combination of chili and chocolate is out of this world as are truffles rolled in a similar mixture. Gluten Free Meatloaf in a Mug
I’ve been receiving more and more request for meals in a mug recipes, as well as individual portion-sized recipes. This gluten free meatloaf in a mug can be made in about five minutes, two of which is for cooking. Surprisingly, the flavor is one of the best-tasting meatloaves I’ve had. It is a spinoff of my Sweet & Savory Gluten Free Meatloaf Recipe for the oven, without the sweetness. It’s heavy on the meat, making it a protein-packed meal. It looks like one big meat ball! Layered Gluten Free Chocolate Mousse Cake
Straying away from the typical all-chocolate mousse cake, I created this layered gluten free chocolate mousse cake instead. I don’t know about you, but I like to have cake in my cake. If I wanted all mousse, I would simply make chocolate mousse. I don’t enjoy the typical triple chocolate mousse cake because it contains white chocolate, of which I am not a fan. It’s too sweet for my tastes buds. This recipe combines the best of both worlds, chocolate cake and chocolate mousse. That’s all I can say is, “Mmmmm!” Continue reading “Layered Gluten Free Chocolate Mousse Cake”
Gluten Free Baked Alaska: Individual Size
Individual portions of gluten free Baked Alaska creates an elegant dessert. It is special enough to even serve for Valentine’s Day. You can get creative and use something other than the traditional base, sponge cake. You may use brownies, chocolate cake, and pound cake, to name a few. The best part? – the ice cream surprise, right in the middle! Enjoy. Continue reading “Gluten Free Baked Alaska: Individual Size”
Coconut Milk Ice Cream Recipe
Perhaps you are vegan, vegetarian, dairy free, or just wish to avoid processed ingredients. If so, you have to try this healthier version of ice cream. This is a rich coconut ice cream recipe that is naturally gluten-free. Rather than using heavy whipping cream or half & half, this recipe calls for all full-fat gluten free coconut milk. Coconut milk makes the perfect substitute for cream and eggs in ice cream recipes. If you can tolerate eggs, you can reduce the coconut milk by a 1/2 cup for every 3 eggs added. When you roll ice cream into balls and then coconut flakes, they look like snowballs. Enjoy! Continue reading “Coconut Milk Ice Cream Recipe”
Gluten Free Chocolate Cream Cheese Icing
I thought for a change, rather than traditional cream cheese icing, you may desire a different choice. You can never go wrong with more chocolate. This icing is not super sweet. So, feel free to add additional confectioners’ sugar, if you choose. Enjoy!

Gluten-Free Dairy-Free Chocolate Syrup Recipe
If you are gluten free and dairy free, this dairy free chocolate syrup recipe is just what you need. This thickened mixture has a very similar texture as dairy chocolate syrup. Your desserts will appear as if they do contain dairy. A friend of mine tasted it, and said, “It tastes like Hershey’s Syrup. I’d never know.” Enjoy! Chewy Gluten Free Vegan Oatmeal Raisin Cookies with Superfoods
Nature’s Path just came out with three flavors of their new Qi’a™ Superfoods Hot Oatmeal. Flavors include Creamy Coconut, Superseeds & Grains and Cinnamon Pumpkin Seed. I love the Superseeds & Grains because it has a bit of crunch. It contains rolled oats instead of quick-cooking oats like so many brands. They asked me to create a recipe using my favorite flavor for their Pinterest Oatmeal Month (January) contest and here it is, a gluten free vegan oatmeal raisin cookies. They are so good that when I made them (just before dinner), I ate three and couldn’t eat my dinner. It was one of those nights…eat dessert for dinner and a small dinner for dessert. Mind you, I am not on a dairy-free or vegan diet, yet they still met my requirements for a chewy cookie. Enjoy!
Note: These are easy to make because the oatmeal packs contain six ingredients, with less to purchase and measure. Continue reading “Chewy Gluten Free Vegan Oatmeal Raisin Cookies with Superfoods”
Gluten Free Bananas Foster
If you wish to impress your guests, flambe a dessert. Bananas Foster may be served flambe-style, though it is not necessary. If you’ve never had Bananas Foster, now is your chance. It is extremely delicious and easy to make. The caramel sauce is simply made with butter, brown sugar, and a couple of alcohols. Traditionally served over vanilla ice cream, enjoy this gluten free bananas foster over bread pudding, waffles, French toast, in crepes, and my favorite, wait for it…over cheesecake. You can also serve the caramelized bananas alone with just the sauce. To die for! If you do not light the alcohol or cook it off, you’ll feel as if you had a cocktail or two! – Just warning you.
