Sometimes there is confusion between crumbles, crisps and cobblers. They all contain a fruit filling topped with various ingredients. A crumble and a crisp have a crunchy topping. A crisp contains oats, where a crumble does not. A cobbler is topped with dough, much like biscuit dough. If you’re not paleo, you can add some certified gluten free oats and you’ll have yourself a gluten free peach crisp. Enjoy this gluten free paleo peach crumble! Gluten Free Zucchini Cakes
After a Facebook fan tried my Zucchini Hash Browns Recipe, she asked for a recipe that would hold the zucchini together. This is a wonderful solution; however, the two recipes are quite different. These gluten free zucchini cakes contain flour, specifically, my homemade gluten free bisquick (baking mix) recipe. They are lightly sweetened, yet savory, and fluffy, yet moist. Enjoy! Gluten Free Parmesan Poppers
In an attempt to create gluten free popovers, my third batch turned out like dinner rolls instead, but I thoroughly enjoyed them. So, I altered the recipe a little more to remove the creaminess to create these delicious poppers. They are yeast and leaven-free as the eggs alone act as a leavener. I hope you enjoy them. Gluten Free Panko Bread Crumbs – Breadcrumbs
Panko breadcrumbs are Japanese-style bread crumbs made from the dough of bread without crust. As you can see in the below photo, panko is white, not toasted crumbs. I throw some gluten free panko crumbs into the batter I use for my Gluten Free Tempura recipe as it adds texture. I have used many of my gluten free bread recipes to make panko, but none of them have been as crispy as when I use Schar rolls. Check out this super simple recipe. Beets and Citrus Arugula Salad Recipe & Dressing
I enjoy making and eating this arugula salad recipe due the zesty flavor of arugula. You do not need a lot of seasonings when you use arugula. Arugula pairs well with citrus as it does with other fruit, nuts and seeds. Enjoy this refreshing salad. It is naturally gluten-free as long as you are sure to use gluten-free fruit when using canned. Continue reading “Beets and Citrus Arugula Salad Recipe & Dressing”
Gluten Free Coffee Semifreddo
Ice cream makers are perfect for making semifreddos, a semi-frozen dessert. Coffee semifreddo is a dessert I enjoy serving dinner guests for a little pick-me-up/caffeine boost, thought it is lightly flavored. You can make the pudding in advance and keep refrigerated. Then about 20 minutes prior to serving, freeze it up in your ice cream maker and fold in the whipped cream. Those who do not make homemade desserts are usually fascinated with the process and thoroughly enjoy this light treat. You can vary the recipe by adding various mix-ins. Gluten Free Blueberry Smoothie
I am fascinated by the popularity of mason jar recipes. I made this simple gluten free blueberry smoothie in advance knowing I would need something fast one morning. If you are a busy person that flies out the door, consider making some of your meals in mason or canning jars in advance. Look for more mason jar recipes in the near future. In the meantime, enjoy this one. Continue reading “Gluten Free Blueberry Smoothie”
