Chewy Gluten Free Oat Bites (Allergen-Free)

While grocery shopping, I stumbled upon some oat bites in the bakery section of my local grocery store. Unfortunately, they were not gluten free. These gluten free oat bites are identical except that  I omitted the dried apricots. You can add some if desired. They turned out delicious!

Chewy Gluten Free Honey Oat Bites (Egg-Free)

Total Time: 28 minutes

Yield: Makes 2 dozen oat bites

Chewy Gluten Free Honey Oat Bites (Egg-Free)

A crunchy and chewy gluten free honey oat bites that you can serve for snacks or dessert.

Ingredients:

  • 1/2 cup butter, softened
  • 1/2 cup granulated sugar
  • 2 tablespoons honey
  • 1 teaspoon neutral-flavored oil
  • 1 cup certified gluten-free oat flour
  • 1 cup certified gluten-free rolled oats
  • 2 tablespoons flaxseed meal
  • 3/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup raisins (or sub half with chopped dried apricots)
  • 2 tablespoons shredded coconut (or additional flaxseed meal for nut-free)
  • 2-1/2 tablespoons sunflower seed kernels
  • 2 tablespoons finely chopped walnuts

Instructions:

  1. Preheat the oven to 350ºF. Oil a mini muffin pan; set aside.
  2. In the large bowl of your mixer fitted with the paddle attachment, cream butter, sugar, honey, and oil on medium speed until the sugar breaks down, about 4 minutes.
  3. Combine the oat flour, oats, flaxseed meal, baking soda, and salt in a bowl. Add to the top of the butter-sugar mixture. Beat on medium speed until combined.
  4. Fold in the raisins, coconut, and walnuts.
  5. Fill the mini muffin pans, pressing the down the dough to compact.
  6. Bake on the center shelf 10 to 13 minutes or until lightly browned. Allow the bites to cool in the pan on a wire rack for until cool enough to refrigerate. Refrigerate until room temperature. Remove from the pan and allow to cool completely directly on the wire rack.

Tips

Dip the tops in melted chocolate and allow to harden, if desired.

  1. Walnuts mentioned in step 4 are not listed in ingredients. What quantity was in your tested batch?

  2. Please clarify:
    From ingredients: qty of apricots – It’s unclear why the notation says “or half” without a unit of measure; half as much as if using raisins (so 1/4 cup), or half a cup?
    From instructions, step 3:
    Step 3 lists both flour and oat flour. Is there another type of GF flour missing from the ingredients?
    Step 3 says to add the flour etc. on top of the butter-sugar mix (which is in the mixer), then mix the dry ingredients with your hands. I recommend inserting a prior step to mix the dry ingredients in a separate bowl before adding to the wet ingredients in the mixer.
