Gluten Free Microwave Pizza Recipe in Mug or Ramekin

In about 15 minutes, you can have an extremely delicious slice of gluten free microwave pizza using this easy to make recipe. Use jarred sauce or a quick 3-minute homemade recipe. There’s nothing that compares to this. So, here you have it. Enjoy. My husband surely did!

Gluten Free Microwave Pizza

I’ve adapted my favorite pizza recipe using my almond flour blend to make this delicious, perfectly textured gluten free microwave pizza. No gumminess!

Ingredients

For the Pizza Dough:

  • 3 tablespoons 2% low-fat milk (or unsweetened rice or almond milk without gum) See above links
  • 1/3 teaspoon granulated sugar
  • 1/4 teaspoon instant dry yeast
  • 1/4 cup + 2 1/2 tablespoons Carla’s Gluten Free Almond Flour Blend see recipe link above
  • 1/4 teaspoon gluten free baking powder* Rumford’s
  • 1/4 teaspoon guar gum
  • 1/8 teaspoon Italian seasoning
  • 1/16 teaspoon salt
  • 1/32 teaspoon garlic powder
  • 1/2 teaspoon olive oil any type
  • 1/8 teaspoon apple cider vinegar

For the Sauce:

  • 2 tablespoons tomato sauce
  • 1/8 teaspoon Italian seasoning
  • 1/16 teaspoon onion powder
  • 1/16 teaspoon garlic powder
  • 1/32 teaspoon sugar
  • 1/32 teaspoon salt optional
  • 1/32 teaspoon ground black pepper optional

My Toppings:

  • 1 ounce shredded Mozzarella cheese 1 stick (or Dairy Free Shreds by Follow Your Heart or Daiya, if you must)
  • 3 slices Applegate Uncured Pork & Beef Sausage It's dairy-free! (or fried tofu for vegan/vegetarian)

Instructions

  1. To Make the Dough:
  2. Combine the warm milk, sugar, and yeast in a small container; set aside.
  3. In a small bowl, using a fork, combine the flour blend, baking powder, guar gum, yeast, Italian seasoning, salt, and garlic powder; set aside.

  4. Add the oil and vinegar to the yeast mixture. Make a well in the center of the dry mixture and pour in the wet mixture. Stir everything together until it forms a sticky dough.

  5. Scoop the dough onto an oiled sheet of plastic wrap. Coat the top of the dough with oil and loosely wrap; set aside.

  6. Make the below sauce recipe. If you’re using jarred sauce, allow the dough to rise for 3 – 5 minutes.
  7. Once the sauce is done, oil a microwave-safe 5-inch ramekin, or 2 coffee mugs or teacups, and press the dough into the mug and slightly up the sides. If you want a really good crust, clean up any mess while the crust rises about 5 minutes. Otherwise, proceed to the next step.

  8. Microwave on high for 1 minute (based on a 1200-watt microwave – longer for lower-powered and reduce the time for higher-powered).

  9. Add 1 tablespoon of sauce for the entire dough, even if dividing it between two containers. (You don’t want to add too much sauce or it may soften the dough. You can use any extra sauce to make another batch of pizza or dip your cooked pizza into it.)

  10. Add 2/3 the amount of cheese, pepperoni or whatever protein you’re adding, and top with the remaining cheese. Microwave on high for 40 seconds.

  11. Immediately remove from the container and transfer it to a plate. Serve immediately.
  12. To Make the Sauce:
  13. Combine all of the ingredients in a small microwavable container and microwave for 30 seconds or until bubbly; set aside.

Tips

*Make the recipe once. If you decide you’d like a fluffier crust, add up to 1/8 tsp more baking powder.
