Bacon Cheeseburger Stuffed Gluten Free Biscuits

If you’re in the mood for a calzone, making these gluten free biscuits stuffed with a bacon cheeseburger filling. Just add some dough to a muffin tin, add your favorite filling, and cover it with additional dough. It can be that easy. You can use traditional filling or this bacon cheeseburger filling. The best part about this filling is you can add your favorite hamburger condiments and make them to order. My husband loved these gluten free biscuits. His reaction was, “What was that? Those were gooood!” I’m sure kids would love them, as well. After all, many husbands are like kids. (smile) Sorry guys!

Bacon Cheeseburger Stuffed Gluten Free Biscuits

Stuffed gluten free biscuits using your favorite cheeseburger ingredients. Add your favorite condiments, as well!

Ingredients:

  • 1 recipe Fluffy Gluten Free Biscuits
  • 2 slices bacon, cut into 1/4-inch pieces
  • 1/2 lb. lean ground beef (7 – 10% fat)
  • 1/4 cup fresh minced yellow onion
  • 1 Tablespoon mayonnaise
  • 1 Tablespoon sweet pickled relish (optional)
  • 3/4 cup shredded cheddar cheese

Instructions:

  1. Fry the bacon over medium heat for about 2 minutes. Add the beef, onion, and relish (if using it), and cook them until the beef is no longer pink. Increase the heat to medium-high and cook until the juices evaporate.
  2. Stir in a total of 1 tablespoon of your favorite condiments such as mayonnaise, ketchup, and/or mustard. Set the pan aside for the mixture to cool as you prepare the dough.
  3. Make the gluten free biscuits as directed in the link above.
  4. Scoop 1/4 cup of dough into about 12 muffin tins. Take one raw biscuit out of a tin and slice off the top third. Press the bottom piece of dough into a muffin tin and shape it like a hallow cup. Add about 3 tablespoons of filling and top with about 1 tablespoon of shredded cheese. Repeat with remaining biscuits.
  5. Using your hands, flatten out the top third of the biscuit that you sliced off making it large enough to cover the filled biscuit cup. Press down the edges to seal it well.
  6. Bake for about 10 minutes. Baste the tops with melted butter and bake for additional 5 minutes.
  7. Remove the biscuits from the muffin tins and serve warm. Freeze leftovers in a zipper storage bag.

Tips

Variations:

Add chopped tomatoes, mustard, whatever condiments you enjoy on your burgers.

  1. Do you think these would freeze well? Has anyone tried that? They sound like a great idea for my son’s lunch, but I’d want to make them ahead so he could grab and reheat later.
