Gluten Free Four-Layer Dessert with Flavor Variations

It only takes 15 minutes to bake this flavorful crust and the rest of this scrumptious recipe is no-bake. You can use ready-made fillings or homemade. I even provide suggestions for a fifth layer! This summer deliciousness can be only minutes away. However, you can enjoy it throughout the year.

Gluten Free Four-Layer Dessert

A delicious little or no-bake four-layer gluten free dessert with a nutty crust, cheesecake-like whipped filling, a second filling of choice, and topped with whipped topping.

    To Make the Baked Crust:
  1. Preheat the oven to 350ºF.
  2. In a medium to large bowl, combine the butter, flour, and pecans; press into a 9 x 13-inch baking dish. Bake on center shelf for 15 minutes. When the crust is done baking, transfer to a wire rack to cool completely.
  3. While the crust bakes, in the bowl of your mixer, fitted with the paddle attachment, if have one, beat the cream cheese and sugar until fluffy, 4 - 5 minutes. Add only 2 cups of the Cool Whip/whipped cream and mix on low until blended. Distribute over the cooled crust or refrigerate until the crust is cool.
  4. Make the two packages of instant pudding per the instructions on the box. Spread over the cream cheese layer or refrigerate until crust is cool.
  5. Spread the remaining 2 cups of Cool Whip/whipped cream over the top of the dessert and refrigerate to allow to fully set for at least 3 hours.

Tips

Variations: You can add a fifth layer of fresh fruit or gluten free pie filling in between the two existing fillings. Say, you want to use banana instant pudding as one of the fillings. You can add sliced banana between the cream cheese filing and pudding.
