Ingredients

  • Chewy Chocolate Cookies Recipe minus the cherry juice cherries, and chocolate caramel recipe
  • 1 cup gluten free semi-sweet or dark chocolate chips Nestle's
  • 1-1/2 quarts gluten free ice cream flavor of choice
  • 2 tablespoons raspberry liqueur or raspberry emulsion by LorAnn Oils, to taste

Instructions

  1. Make the cookie dough as instructed at the above Chewy Chocolate Cookie Link from steps 1 - Then, scoop 1 tablespoon to 1-1/2 tablespoons of cookie dough and place on prepared baking sheets. Mash the cookie dough down a little as it is a thick dough.
  2. Continue to steps 10 - 1Bake a little longer if you are making larger cookies. (You only bake the 3/4 tablespoon of dough for 11 minutes.) This 1 tablespoon takes about 12 minutes and 1-1/2 tablespoons of dough take about 13 minutes to fully bake. However, ovens and thickness of cookie sheets vary, effecting baking times. (The thicker the cookie sheet, the longer they take to bake.)
  3. Once the cookies are cooled, scoop your desired flavored ice cream onto the bottom of one cookie and top with another cookie, flat sides facing each other. Place on a cooled parchment-lined baking sheet and freeze. Individually packaged in zipper sandwich bags or several in an air-tight container or gallon-sized zippered storage bag.
  4. If you're making homemade berry ice cream. Make the French Vanilla Ice Cream Recipe and once cooled, add the pureed berries and flavoring/liqueur. Freeze as directed.

Tips

If you prefer a smooth cookie surface, be sure to roll the dough into balls and then slightly flatten.
