Skinny Gluten Free Yogurt Bars

Looking to lose weight or just feed your family healthier choices? This gluten free yogurt bar recipe is perfect. Let everyone choose a fruit and yogurt flavor each time you make them.

Ingredients:

  • 16 oz. gluten-free yogurt*
  • 1/2 cup fruit**, fresh or frozen
  • 6 to 8 homemade popsicle cups (or paper cups and popsicle sticks)

Instructions:

  1. Plastic popsicle kit or wax-lined cups such as Dixie brand
  2. In your blender, add one-third of the yogurt and frozen fruit, cover and blend until smooth. Avoid the highest speeds or you will whip air into the mixture.
  3. Distribute the fruit mixture between the cups/containers, filling no more than one-third full.
  4. Pour remaining yogurt over the tops, cover with plastic lids, if using a plastic popsicle kit, and freeze until solid, about 2 hours. If using paper cups freeze for about 20 minutes or until partially frozen. Then insert a stick into each cup. Continue to freeze until solid, about 2 hours.

**If your fruit is too tart, sweeten it with a bit of stevia or honey (or sugar, if that's the only thing you have.)
