One of the healthiest Halloween treats is meringue ghosts. You can use melted chocolate for the faces or gluten free royal icing with gluten free food coloring (preferably gel paste). They are so cute I just had to share them with you.
Gluten Free Meringue Ghosts
An easy meringue ghosts recipe. Using gluten free vanilla and frosting/chocolate, they make a healthy Halloween treat.
Ingredients:
- 2 large egg whites (or 1/4 cup liquid from white kidney/cannellini beans)
- 1/4 teaspoon cream of tartar
- 1/2 cup granulated sugar, pulsed in food processor until fine
- 1/4 teaspoon pure vanilla extract (or almond for whiter ghosts)
Instructions:
- Preheat oven to 200ºF. Line a baking sheet with parchment paper and set aside.
- In the bowl of your electric mixer, beat the egg whites on low-medium speed until foamy.
- Add the cream of tartar and continue to beat the whites until they hold soft peaks.
- Add the sugar, a little at a time, and continue to beat until the meringue holds very stiff peaks and the sugar completely dissolves.
- Beat in the vanilla.
- Weight down the parchment paper with something you can later remove to keep the paper anchored.
- Scoop the meringue into a pastry bag or piping tool.
- With the pastry bag in a perpendicular (straight up and down) position, pipe meringue about 2 inches high onto the prepared baking sheet.
- Bake the meringues for approximately 60 to 90 minutes or until they are dry to the touch. Turn off the oven, crack the door open and allow the ghosts to set overnight.
- Allow to sit at room temperature for one to two days until ready to serve.
