That’s all I can ask is, “Where have gluten free chicken and waffles been all my life?” They make such a delicious combination! I used my Classic Waffle Recipe which is lighter than traditional waffles. Oh my! I literally have no words other than “Yum!”
Gluten Free Chicken and Waffles
Whether you're looking for soul food or those Pennsylvania Dutch gluten free chicken and waffles, this recipe will fit the bill. Even non-gluten free dieters love them!
Ingredients:
- 1 recipe Gluten Free KFC-Style Chicken
- 1 recipe Classic Light Gluten Free Waffles
- KFC-Style Coleslaw (optional)
- Sliced watermelon (optional)
Instructions:
- Make the chicken recipe as instructed at the above link. Preheat the oven to 170 or 200ºF. Be sure to not overcrowd the oil when deep-frying. As overcrowding produces oily, not crispy chicken. As the chicken becomes done, transfer it to an oven-safe dish to keep warm.
- Next, make the waffles as instructed at the above link. As the waffles become done, place them directly on the oven rack to keep warm.
- Serve with butter and pure maple syrup. Watermelon, as well as coleslaw, make excellent additions.
Tips
Make Ahead Waffles: Make the waffles in advance following the instructions in the Tips section on the waffle recipe page and freeze. Then, toast them as soon as the chicken is done.
