Gluten Free Sorghum Flour Bread

It’s amazing how light this gluten free sorghum bread recipe turned out without the use of tapioca or modified starch! It is definitely a sandwich quality bread, which may be made egg-free, if desired (see tips). The dough is moist and soft with a crisp crust. I can’t wait to apply this success to all my future gluten free bread recipes.  Make this bread in a 9 x 5-inch loaf pan or bread machine with a gluten free setting.

Using shrimp, pork, and/or beef, you can make these gluten free siu mai,  open-top dumplings. Called shaomai in Japan and siomai in the Philippines with slight variations, they are often served at dim sum (Chinese-style brunches where they serve several small appetizers).  Elsewhere, they are served as appetizers as well as meals. I provide you with filling recipes for Hothot Shaomai, a beef (or minced mutton (sheep), ginger, and scallion filling as well as shrimp and pork shumai. Roasted Sweet Potatoes, Kale, and Onion

Flavored with garlic and thyme, this combination of ingredients is incredible. It will convert any kale hater! The sweetness of the sweet potatoes, caramelized onions, and balsamic vinegar couple with garlic and the spice of pepper, salt, and thyme all hide the fact that you eating kale. They all contribute to the complex flavors. Yet, the ingredients are so basic. Serve this dish warm, at room temperature, or chilled.

New Grounds Food makes Eat Your Coffee Energy Bars. They are caffeinated bars that contain healthy gluten free and vegan ingredients. I’ve created my own version, starting with the Mocha Latte flavor. Personally, I don’t drink coffee but love these bars. The coffee doesn’t upset my stomach like liquid coffee usually does. Plus, their delicious!
