High fiber gluten free muffins make the perfect breakfast treat. These gluten free oat muffins fit the bill! They are free of refined white starch and are lightly sweetened with fresh apples and unsweetened apple sauce. They’re delicious and nutritious.
Gluten Free Oat Muffins with Apples
For a healthy alternative to breakfast cereal or expensive granola, try these fiber-packed gluten free oat muffins.
Ingredients:
- 1 1/4 cups certified gluten-free rolled oats (Bob's Red Mill, Cream Hill Estates)
- 1 cup gluten free oat bran (Bob's Red Mill)
- 1/2 cup flax or chai seed meal
- 1/4 cup granulated sugar (or coconut sugar, xylitol, or you erythritol)
- 2 teaspoons ground cinnamon
- 1 Tablespoon baking powder, gluten-free
- 1 teaspoon baking soda
- 3/4 cup unsweetened applesauce
- 1/2 cup unsweetened almond milk (or rice milk)
- 1/4 cup neutral-flavored oil
- 2 teaspoons pure vanilla extract
- 2 large eggs, beaten
- 1 large, firm apple, peeled and diced (Gala)
- 1/2 cup chopped nuts or seeds of choice (optional)
Instructions:
- Preheat oven to 400°F. Oil a 12-cup muffin pan; and set aside.
- In a medium-size bowl, whisk together the oats, oat bran, flax seed meal, sugar, cinnamon, baking powder, baking soda,
- Create a well in the center and add the apple sauce, almond milk, oil, vanilla, and beaten eggs. Using a wooden spoon, stir together until smooth.
- Fold in the apples and nuts.
- Evenly distribute between the 12 muffin tins.
- Bake on the center shelf for 15-20 minutes or until brown.
Tips
When omitting the nuts, this recipe makes 10 - 11 muffins.

I just joined a few days ago and this was the first recipe I tried. The muffins are absolutely delicious and filling. This will be a regular in my breakfast rotation. I like that there is NO refined flour of any kind in the muffins.
