I usually make this gluten free zucchini casserole without any seasoning, as zucchini is flavorful enough on its own, but adding a little smoked paprika made it very tasty! Ensure the smoke paprika you use is gluten-free, as some items that contain smoke flavor are made by using gluten to carry the smoke. You could really get a wonderful flavor by adding cooked bacon. Oh yum! I would use this when I had guests, but not as an everyday vegetable, as cannot afford the calories! – but oh, how I wish I could! That just sounds so yummy! You can eat this as an entire meal. I did, and enjoyed every bite! I hope you do, as well!
